In the heart of the village of Polena, in a festive atmosphere full of the aroma of lakrori in the sack, one of the most beloved traditions of the Albanian southeast returns. The "Lakrori Festival", now a tradition for more than a decade, brings together women, men, young people and tourists every year to celebrate together one of the most representative dishes of the area. The Lakrori Festival is not just a festive event. It is a living memory of a former life, where every dish was prepared at home, by hand, with patience and dedication. Here, the women of the village are the guardians of this rare heritage.
"I've been participating in this festival for five years. We make lakrori with onions and tomatoes, with cottage cheese, with lempjeta, with yogurt. I started when I was 12 years old, I learned it from my mother, I would help at home, and I enjoyed it. On Sundays, lakrori was consumed when we were in the cooperative because that was the norm, and now I can say on Saturdays. Some people order by phone and the village women make it for them. Tourists also come and order."
This is not just a tradition preserved by the elderly. In Polenë, the younger generations grow up with lakrori as part of their cultural identity. Cooked with love in the bosom of the family, it remains the strongest link between the past and the future.
"I am a student at the University of Korça. We have preserved the tradition in our families here in Polena. Since we were little, my mother kept my sister and me close and we watched how she cooked lakrori. We hope to preserve this tradition in our families in the future."
At this celebration, it's not just the women who cook. The men prepare the fire, the sachi, and take care of the roasting, so that the cabbage comes out properly, slowly roasted on all sides.
"In Polena, the lakrori festival is an old tradition. It has been going on for over 10 years. In Polena, every family has a lakrori tradition, as an act of honor. The men's role is to prepare the saci and for baking. You have to hold it over your head so it doesn't burn, and it becomes one on all sides."
Lakrori is not just a food. In every thin noodle, in every heated bowl, lies the memory of a people who know how to preserve their roots and live with taste.
" The most popular lakrori is with cottage cheese and eggs, and the one with onions and tomatoes. They all go well, but these two are the ones they prefer the most. They come from the Pogradec and Korça districts, and today they have also come from Pristina."
" I am a granddaughter from Polena, my mother is from here. I wish the Polena people to enjoy today, to always have joy and celebrations. I learned to make lakrori when I was little, I also know how to bake it because we had sac at home."
In Polena, every thin hand-rolled noodle is a story. Every hot pot over the fire is a memory. And every lakror that is shared with others is a promise that this tradition will not die out. Because in Polena, lakror is not just food but a legacy. A celebration that does not end with the end of the day, but continues to live in every home, in every generation, in every memory./ CNA
