Health experts explain why we shouldn't leave bread in the refrigerator

After buying fresh bread, the first question is where to store it. On the counter, in the cupboard, or in the refrigerator so it doesn't spoil?

Many people choose the refrigerator, believing that low temperatures extend the shelf life, as is the case with many other foods.

However, in the case of bread, things are not so simple.

The biggest problem with bread is not that it spoils immediately, but that it loses its freshness, and this process is accelerated in the refrigerator.

Scientists explain that at the temperatures of a home refrigerator, the starch in bread undergoes a natural process called recrystallization more quickly. Simply put, the crumbs lose their elasticity, become drier and harder, and the bread acquires that familiar stale feel.

When does it make sense to keep it in the refrigerator? There are exceptions.

If it is very hot and humid, or if the bread contains perishable ingredients, such as cream or fresh dairy products, then refrigeration may be necessary for safety reasons.

However, for plain bread, the refrigerator is not the ideal option.

Where is it best kept?

If you plan to eat the bread within two or three days, experts recommend storing it:

at room temperature, in a bread box or paper bag, in a cool, shady place at home./CNA
